Winemaking
The fermentation phase is preceded by a natural maceration lasting 4 to 6 days, intended to favor the expression of the fruit. The fermentation itself takes place slowly, with a very controlled temperature, which can rise to 30/32° at the end of the phase. It is punctuated by regular pumping over which can be accompanied by pumping over (or pigeage), an ancestral technique which has never been abandoned to Chevalier.Ageing
The aging of red wine takes place entirely in barrels. For the great wine, the duration of the passage in barrels is spread out from 14 to 24 months and the proportion of new wood varies between 40 to 60%; depending on the strength of the vintage.
